Nova Maple Candy: A Family-Produced Delight from Pennsylvania

Nova Maple Candy is a family-produced treat crafted in Northwest Pennsylvania, sustainably harvested from our own hardwood forests. We are proud to offer you the best maple syrup possible, and we are confident that you will enjoy eating it as much as we enjoy making it. Use it on sweets, meats, and breakfast treats - it's the perfect addition to any culinary creation.

This 100% Pure, all-natural maple sugar candy is gluten and dairy-free, made from 100% Grade A Maple Syrup. A 16-ounce box typically contains 32-48 pieces, with each piece ranging from 1/4 to 1 ounce in weight, so the exact number may vary.

Shelf Life and Handling: The shelf life of this maple candy is approximately 6-8 weeks, and the expiration date is printed on the bag. Please keep this in mind when purchasing as a gift. Do not remove the candies from the bag until they are ready to be consumed, and if storing for an extended period, keep the unopened bag in the freezer to extend the shelf life.

International Grading System: Nova Maple Syrup uses the new International Grading System that took effect in April 2015. All of the syrup we sell is Grade-A, with the sub-grades varying based on the weather, trees, and individual season. We offer Grade-A Golden Delicate Taste, Amber Rich, Dark Robust, and Very Dark Strong. We do not ship the new Grade-B Commercial (formerly Grade-C) syrup. Darker syrups have a stronger maple flavor, but both are equally sweet, comprised of 67% all-natural sugar and 33% water. The choice comes down to personal taste preference.

Products We Offer: In addition to our maple candy, we offer a variety of maple products, including:

Syrup: Our core product and the base ingredient for all our confections. We make all four grades and sell in various sizes, from gallon to half-pint.

Sugar: Maple sugar is a great replacement for white sugar, providing an unprocessed sweetener with a subtle maple flavor.

Cream: Our maple cream is simply our syrup boiled down further and churned into a rich spread with a consistency similar to natural peanut butter.

The Process: We tap both hard (sugar) and soft (red) maple trees across four properties in January or February, depending on winter temperature forecasts. Tubing is set up throughout the woods, connecting all maple trees to a vacuum pump, which helps to pull sap from the trees. The clear sap, with a sugar content ranging from 1-3%, is then run through a reverse osmosis (RO) system to increase the sugar content before being pumped into our evaporator. This makes the boiling process more efficient, and we also use a steam recovery system to save as much fuel oil as possible. Once the syrup reaches 67% sugar, it is ready to be "drawn off" the evaporator and pumped through a filter press. Finally, it is bottled at a high temperature (160-180 degrees) to eliminate any bacteria growth and sent to our customers.

Our Story: Nova Maple Syrup was established in 2015 with the purchase of a 100-acre property in Hartstown, Pennsylvania. The inaugural commercial syrup season began in late January 2016 with roughly 7,500 taps, and we've since expanded to 22,500 taps covering 275 acres. This business venture started as a hobby in 2013 on 1.5 acres, tapping 50 trees and collecting 17 gallons of maple syrup. Today, the 2019 season yielded over 5,000 gallons.

Jake and Hailee Leveto, the founders of Nova Maple Syrup, gave away glass bottles of maple syrup at their wedding in 2014. Since then, they have turned their hobby into a thriving family business, welcoming two sons born in 2017 and 2019.
